Sure! The best way to take advantage of a pellet grill's capabilities when it comes to cooking steaks is to reverse sear them instead of purely grilling/searing them.

Basically, you'll take advantage of the smoking abilities of a pellet grill to get some smoke flavor into the steaks before going for the sear.

The internal temperature you would smoke them until before the sear really depends on whether you like a rare, medium-rare, medium etc cooked steak.

Let's take my personal preference as an example, a medium-rare steak. I would smoke it on the pellet grill set at between 180 to 225 degrees until the internal temperature of the steak was just under 95 degrees.

At that point, I would take the steak off the pellet grill and set it to its maximum temperature to sear the steak, taking the steak up to an internal temperature of just under 125 degrees.

Now, some pellet grills are better at searing than others. While some have a relatively low maximum temperature setting of 450 degrees which is not ideal for searing, other models can go up to 700 degrees. Some also offer direct-flame access which can very nicely sear a steak.
