Well, it really depends on the weight of the beef brisket in question and also how thick the brisket is. For instance, a thinner brisket will cook more quickly than a thicker brisket of equal weight as it will take the heat longer to penetrate into the center of the brisket.

However, as a general rule, it will take 1 hour of cooking time for every lb of weight of the brisket. Therefore, to point out the obvious, a 10 lb brisket will take roughly 10 hours.

Though you should never cook to time, when it comes to good BBQ you always want to be cooking to the correct internal temperature.
