The first thing to note is that all pellet grills produce most of their smoke at lower temperature settings (180 to 225 degrees). When a pellet grill is running in excess of 350 degrees, very little smoke is produced as the fire is burning very efficently.

To produce even more smoke at these lower temperatures you want to check if your pellet grill has a dedicated 'Smoke Setting' or if has what's called a 'P-Setting' which can make the pellets smolder for longer.

The longer the pellets smolder the more smoke you'll get. However, that also means temperature swings will be more erratic. Also the longer the pellets smoulder, the more risk there is of a flameout situation.

Therefore, there has to be a careful balancing act between producing more smoke, reasonable temperature swings, and avoiding a flameout.

If you still want even more smoke, you could place an additional pellet smoking tube into the cooking chamber. There are also now several pellet grills that offer a separate 'Smoke Box', which can be loaded with wood chips, wood chunks, and charcoal.
