Pellet grills that offer a dedicated 'Smoke Setting' will typically produce more smoke than models that lack the feature. However, if you see a pellet grill with a P-Setting (Pause Setting) that also means that particular pellet grill has the ability to adjust the amount of smoke produced.

It should be noted though, that when a smoke setting is in use, a pellet grill will have wider temperature swings from the set temperature. After all, you only get more smoke from a less efficient fire where the pellets are smoldering more. 

If you are looking for the most smoke possible you should also look into pellet grills that have a separate 'Smoke Box' that can be loaded with wood chips, wood chunks or charcoal.
