Well, as one of the most important sayings in BBQ goes, 'cook to temp and not time'.
The FDA states that salmon should be cooked to an internal temperature of over 145 degrees. However, you have to be really careful when cooking salmon to not over cook it and make it overall dry.
If you're going to smoke salmon on a pellet grill, you'll want to make sure that you are using a lower temperature setting such as 225 degrees so you can prolong to time period the salmon is exposed to the smoke before its finished cooking.
