Cooking salmon, or any fish for that matter, and keeping it moist and nicely flaked on a grill can be tricky without drying it out/burning the fish. Well, one approach that you may want to consider is plank cooking. The planks are first soaked for two hours so they don’t burn while the fish is cooking.
