Well, you've got two options. You could just turn the pellet grill to its maximum temperature and sear the steak as you would on a gas grill. Now, some pellet grills are better at searing than others.

For instance, an older generation Traeger (Pro 34) only has a maximum temperature of 450 degrees, which is not ideal for good/great searing performance. However, you have modern pellet grills such as those from Recteq which can be set up to 700 degrees (you can review the details on these models in our database).

However, purely searing a steak doesn't really take advantage of the capabilities of a pellet grill. Really, you want to reverse sear your steaks if you have the time.

Reverse searing simply means you're going to smoke the steak at a low temperature (typically 225 degrees) until the steak is 10 to 15 degrees internally from where you want it to be. Then you'll turn the pellet grill up to its maximum temperature to finish the steak off with a sear.
