How to smoke in a pellet grill?
If you want to smoke your food in a pellet grill you need to run it at lower temperature settings, don't expect to get much smoke production past 350 degrees.
Why? Well, the higher the temperature setting the more efficient the pellet fire will be running. A more efficient fire means less smoke.
Therefore, running a pellet grill between 180 to 225 degrees, often their lowest temperature setting, is going to get you more smoke production. It will also take you more time to cook the food, but that's the trade-off.
Now, also check if your pellet grill/smoker has a dedicated smoke setting, also sometimes referred to as the P-Setting. This can adjust how long the pellets smoulder for in the burn pot before fresh fuel is introduced, the higher the P-Setting the more the pellets will smoulder, the more smoke.
However, the higher the P-Setting and the longer the pellets sit smoldering the higher the chance of a flame-out situation. So again, getting more smoke and avoiding the pellet fire going out is another trade-off.
