What are the cons of a pellet grill?
Some pellet grills (typically earlier generation Traeger models) were much better suited to being a pellet smoker than a pellet grill, as they only had a 450 degree maximum temperature setting which is not ideal for good grilling/searing.
Modern Traeger models can go higher to 500 degrees, but that's still below the capabilities of a gas grill. However, there are many other pellet grills that can now get to 600 to 700 degrees, equal to that of a gas grill.
A higher typical price point compared to the average gas/charcoal grill has been a common con of pellet grills. However, our database currently contains 75 models under $500. So the common complaint of 'pellet grills are too expensive!' is not true in all cases anymore.
In general though a con (based on your perspective) that pellet grills/smokers produce less smoke than a charcoal smoker/offset smoker is true, in general. Pellet grills/smokes produce a lighter smoke flavor in foods.

But generally speaking, yes, if you are looking for the most smoke flavor possible and you have the time to put up with managing a fire, a charcoal/offset smoker will provide more smoke flavor.
