You can either smoke chicken on a pellet grill (225 to 300 degrees), or you could simply grill it at a higher temperature (400 degrees plus).

The most important thing to remember with chicken is it has to be cooked to an internal temperature of over 165 degrees. Now that doesn't mean you take the chicken off the pellet grill at 165 degrees, a higher temperature may be more suitable depending on whether its breast/leg meat etc.

If you are going to purely grill chicken you do have to be very careful not to char/burn the outside of the chicken before the inside is cooked. Chicken is not steak, you don't want to see any pink inside a 'cooked' chicken when you cut into it.
