Chicken wings are a great cut of meat to experiment with, adding different flavors, as chicken can work well with so many different flavor profiles. The recipe below is for sticky honey chili chicken wings, however, they have also got some additional flavor and texture as they have also been fried. They are well worth a try.

Step 1: So the first step is to get the ingredients ready to coat the chicken wings before they go on your grill/smoker. This seasoning is 2 tbsp Brown Sugar – 1 tbsp Kosher Salt – 1 tbsp Paprika – ½ tbsp Onion Powder – 1 tbsp Granulated Garlic – 2 tsp Ground Cumin – 2 tsp Black Pepper – 1.5 tsp Cayenne Pepper.
Step 2: The next step is to add that seasoning into a bowl with your chicken wings.
Step 3: You’ll then want to get your hands in there and rub the seasoning all over the wings. Remember food safety though, this is raw chicken you’re dealing with so wear gloves/wash your hands after thoroughly.
Step 4: This chicken wing recipe was cooked on a 700 Series Z Grill pellet grill/smoker set to a temperature of 250 degrees.
Step 5: Oak pellets were used for this recipe. Oak pellets provide a softer smoke profile compared to Mesquite etc, and can work well with chicken as a result.
Step 6: Once your grill/smoker/oven hits 250 degrees its time to cook them. The chicken wings will take roughly an hour to get to an internal temperature of 165 degrees.
Step 7: The next step is to produce a honey/chili glaze. Start by placing a small amount of olive oil in a pan on a hob/burner at a low to medium heat.
Step 8: Next, get some sesame seeds in the pan and work them around in the oil. They will start to brown off and their flavor will produce nutty tones.
Step 9: Next, add some chopped-up garlic and stir through.
Step 10: You’ll then want to squeeze in some honey.
Step 11: The final ingredient for this chicken wing glaze is a jar of sweet chili sauce.
Step 12: You’ll then want to stir that all together and bring it up to a light simmer for around 5 minutes. At that point, take it off the heat and put it to one side to cool while the chicken wings finish cooking.
Step 13: After the wings have been cooking for about 35 minutes, get in there with some prongs and turn them over.
Step 14: Don’t worry about trying to get the wings crispy on the outside, that’s not the objective at this point, its just about getting some smoke flavor into the wings and properly cooking them through.
Step 15: To properly cook chicken wings, you’ll want to see an internal temp over 165 degrees. Always make sure you’re touching the meat and not the bone for temperature reading.
Step 16: While all the chicken wings finish cooking, you’ll want a large pan and a decent amount of vegetable oil to completely submerge the chicken wings and get it on the heat.
Step 17: With the chicken wings cooked to above 165 degrees, its time to fry them.
Step 18: You’ll want the temperature of the vegetable oil around 350 degrees to get a nice crisp outer coating on the chicken wings.
Step 19: Place the larger pieces of chicken into the oil first as they will take longer to cook. Carefully move them around to get a nice even coating.
Step 20: Once you have a nice even brown crispy coating on the chicken wings remove them from the oil and place them in a bowl with paper towels in the bottom to absorb surplus oil.
Step 21: Next, take the paper towel out of the bowl and pour in the sweet chili sauce you prepared earlier.
Step 22: Roll the chicken wings around in the honey chili sauce and there you have it, some delicious sweet chili chicken wings to enjoy.
