Why doesn't my Traeger grill smoke?
So first off, any pellet grill, whether its a Traeger or any other brand, if its running at temperatures over 350 degrees don't expect much smoke. The pellet fire at higher temperature settings is running very efficiently to produce those higher temperatures, and with a more efficient fire, you get less smoke.
But at lower temperature settings between 180 and 225 degrees (typical smoking temperatures), some Traegers actually produce more smoke than others. For instance, if you have a modern Traeger, if you have the Super Smoke setting, it will make a difference, and the Pro Series Gen 2 models (Pro 575 and Pro 780) don't have the Super Smoke feature.
To the point where the older Pro Series models (Pro 22 and Pro 34) will actually produce more smoke than the second-generation Pro Series models.
I know that might sound weird, but its because Traeger gave the second-generation Pro Series models a PID controller which is great for temperature accuracy and 5-degree temperature adjustment. However, if you don't give them a dedicated smoke setting, that more efficient pellet fire will produce less smoke.
