Cooking salmon, or any fish for that matter, and keeping it moist and nicely flaked on a grill can be tricky without drying it out/burning the fish. Well, one approach that you may want to consider is plank cooking. The planks are first soaked for two hours so they don’t burn while the fish is cooking. Step 1: The first step to this Cedar Plank Salmon recipe is actually to prepare the ingredients for the Creole Sauce. That means getting 2 medium tomatoes, half an onion, half a bell pepper, 2 celery stalks, and 4 garlic cloves into a bowl and dressing them with 2 tbsp of avocado oil ready for the grill.
Step 2: You’ll want to lightly char the vegetable ingredients for the Creole sauce before taking them off the grill ready for the blender.
Step 3: The charred vegetables were roughly chopped before going into the food blender and 2 tsp of Kosher Salt, 1 tsp of Cayenne Pepper and half a tsp of dried Thyme were added.
Step 4: How blended you want the Creole sauce to be is all up to personal preference as to whether you’d like it smooth or chunky.
Step 5: Some 6 oz fresh salmon filets with their skins still on were laid on some cedar planks that had been submerged in water for 2 hours prior. Soaking the planks is very important, otherwise, the planks will just burn and your salmon with them.
Step 6: Next, avocado oil was dressed over the salmon fillets on both sides.
Step 7: Next, the salmon fillets were seasoned with some cajun seasoning (black, white, and cayenne pepper, onion powder, garlic powder, and paprika).
Step 8: The grill was preheated to 400 degrees before the salmon fillets on cedar planks were placed on the grill. They were then left to cook for 3 minutes with the lid down.
Step 9: After 3 minutes of cooking, some of the Creole sauce was dressed over the top of each of the salmon fillets. Then the lid was put back down on the grill to cook for another 3 minutes.
Step 10: After a total cooking time of 6 minutes, the salmon fillets should be nicely cooked through, at this point, the cedar boars will have probably caught fire just on the edges. Take the cedar planks off the grid, tap out the flames and you’re all good.
Step 11: And that’s it! Some lovely cooked salmon fillets, kept moist on the grill by cooking them on the soaked cedar planks that will have steamed the fish and added some cedar flavor at the same time. Fantastic!
