Step 1: This is a very simple and quick recipe for cooking double lamb chops on your pellet grill/smoker. The first step is obviously to get hold of some nice quality lamb chops.
Step 2: The preparation is very simple. First, brush the lamb chops with some olive oil all over then liberally season them with salt and pepper. Then put them to one side while you prepare the sauce.
Step 3: For the sauce its a base of a couple of tablespoons of Olive Oil, some chopped Garlic, and chopped Shallot. Then saute on a medium heat until they are translucent.
Step 4: Then add a small cup of Chicken Stock, a small cup of Soy Sauce, a small cup of Balsamic Vinegar, and a couple of tablespoons of Dijon Mustard.
Step 5: The final ingredient for the sauce is a small cup of finely chopped Rosemary. Stir all the ingredients together, bring to a simmer, reduce it by half, and then put the sauce to one side off the heat.
Step 6: Pre-heat your pellet grill/smoker to 450 degrees, and for this recipe, Apple pellets were used. A meat probe was then inserted into one of the lamb chops to monitor the cook.
Step 7: The cooking time is going to be short with these lamb chops and for a medium doneness you’ll be looking for an internal temperature around 135 degrees.
Step 8: The cooking time for these lamb chops will only be around 8 minutes in total. Therefore, around 4 minutes into the cook, you’ll want to turn them over.
Step 9: Once at an internal temperature of 135 degrees these lamb chops are done, and they look fantastic. However, you should ideally leave them to rest for a couple of minutes before cutting into them.
Step 10: As you can see, these double pork chops were cooked perfectly with a nice light outer char while the center remains juicy and tender.
Step 11: To serve, get some of the mustard/rosemary sauce you prepared earlier and either dunk the lamb chops into it or drizzle over the top. Fantastic!
