Step 1: The first part of the prep for this Nashville Hot Chicken Fried Sandwich is to break 6 eggs into a mixing bowl.
Step 2: Whisk the 6 eggs together (the yolks and the white) until its consistent.
Step 3: You’ll want to prep the ingredients for the spice rub/hot sauce. For this recipe, its 3 tbsps of Paprika and Cayenne Pepper, then 2 tbsps of Garlic Powder. Then its 1 tbsp of Ground Yellow Mustard, Onion Powder, Black Pepper, Salt, and Brown Sugar. Followed by 1 tsp each of Ancho Chili Powder, Guajillo Chili Powder, Chipotle Chili Powder, Tyme, Cracked Fennel Seed, Marjoram, Mexican Oregano, Habanero Powder, and Ghost Pepper Powder.
Step 4: In a separate bowl from the whisked eggs, place 4 and a half cups of flour and mix in 3 tablespoons (tbsps) of the mixed hot sauce spice rub.
Step 5: This recipe used 6 boneless/skinless chicken thighs. Don’t worry about the layer of fat, that will provide additional flavor and render down during frying.
Step 6: Start by dipping each chicken thigh into the flour/spice rub mixture. Make sure to tap the chicken thigh against the side of the bowl to knock off excess flour.
Step 7: Then dip the flour-covered chicken thigh into the beaten eggs. For an extra crispy layer, dip the egg/flour-covered chicken thigh back into the flour then into the eggs a second time.
Step 8: For the chicken thighs to properly submerge into the oil you’re going to need a big enough pan, with the oil running at 350 degrees before you drop the chicken thighs in. Only fry one chicken thigh at a time.
Step 9: On a flat top griddle/skillet get some butter down and fry off your buns on both sides.
Step 10: On the base of the butter-toasted bun get down a little mayo and then lay a base of sliced pickles.
Step 11: Take a little oil from the fryer and mix it with one tablespoon of the hot spice mixture to make up some hot sauce.
Step 12: After the chicken thigh has fried for 3 to 4 minutes check its internal temperature is over 165 degrees with a meat thermometer then remove it and place it on a paper towel to absorb the oil.
Step 13: Then get that fried chicken thigh onto those sliced pickles and brush some of that Nashville Hot Sauce over the top.
Step 14: And that’s it! An authentic Nashville fried chicken sandwich with hot sauce that will beat anything you’re going to grab from a fast-food vendor.
