Step 1: The first step, after quickly putting a knife in the back of the lobster to be humane, place the lobster in a pot of boiling water with a little salt for 2 minutes.
Step 2: After two minutes, remove the lobster and place it into a pan of ice water to stop the cooking process.
Step 3: Next, once the lobster is cooled (5 minutes should be enough), remove it from the ice and then take a sharp knife and cut down through the middle to get two halves.
Step 4: You’ll want a really sharp knife to do this well, and it will probably take two cuts and turning the lobster 180 degrees.
Step 5: At this point, the meat inside the lobster is very slightly cooked. Its gone from being translucent to a more beige color. But its not completely cooked through, that will be done on the grill.
Step 6: The next step is to prepare the compound butter, starting with finely chopping up some Tarragon and Parsley.
Step 7: Then finely chop up some shallots.
Step 8: Place all those ingredients together into a bow along with a block of butter. Squeeze in a whole lemon as well which works perfectly with any seafood.
Step 9: Once all those ingredients have been mixed in to create the compound butter, its ready to be applied to the split lobsters. You won’t need all this compound butter for a few lobsters, so you can freeze the rest for next time.
Step 10: Place a spoon of compound butter into each half of the lobster and use the spoon to lightly push it into the lobster meat. Then give them a final season with sea salt/black pepper.
Step 11: Preheat your grill to between 400 to 450 degrees and place them split-side down for around eight to ten minutes.
Step 12: After the initial ten minutes of cooking, turn the split lobsters over.
Step 13: Then place another spoon of the compound butter into the lobster shells and continue to cook them for a further five minutes.
Step 14: This is the end result, quickly grilled fresh lobsters in compound butter. For me personally, this is my favourite method to prepare lobsters.
