Step 1: This recipe started off with a whole chicken cut into two so that it would cook faster on the pellet smoker and a larger surface area was exposed to the smoke.
Step 2: For seasoning, it was very simple. For additional texture, Coarse Ground Black Pepper was used mixed with Salt and Garlic.
Step 3: With a whole chicken like this, you need to be pretty liberal with the Salt and Pepper and get it all over on both sides, remembering food safety and handling raw poultry.
Step 4: Once seasoned, the split whole chicken was placed on a baking tray and then placed in the fridge for two to three hours for the seasoning to penetrate into the chicken meat.
Step 5: The pellet smoker was then set to a temperature of 325 degrees with some Oak pellets, which produce a neutral smoke flavor that works well with chicken.
Step 6: After sitting in the fridge for 3 hours the chicken was placed in the pre-heated pellet smoker running at 325 degrees.
Step 7: An hour into the cook, the chicken sink was starting to develop some color, and its internal temperature was at 130 degrees on its way up to the target temperature of at least 165 degrees.
Step 8: After two and half hours the chicken had developed a nice golden color and even more importantly its internal temperature was over 165 degrees, so it was ready to come off the pellet smoker.
Step 9: To pull the cooked chicken for the sliders you can use your fingers, but remember it will be really hot, so you can also use a fork to separate the skin and bones.
Step 10: With all the chicken meat off the bones, you’ll need to chop it up a little more. At the same time mix the white and dark meat together.
Step 11: Next, get the chopped-up chicken in a bowl and add in your favorite BBQ sauce. You’ll want enough to add enough for sufficient flavor and moisture but don’t drown it.
Step 12: Get the base of the Sliders into a baking tray and place a slice of Gouda cheese on top of each one.
Step 13: Then get the BBQ chicken onto of the Slider bun bases/Gouda cheese, making sure to evenly distribute the chicken.
Step 14: Next, for additional flavor but also texture, some sliced Red Onion was placed over the top of the BBQ chicken.
Step 15: Then a good layer of shredded Monterey Jack cheese went over the top of the sliced Red Onion.
Step 16: Finally, you’ll probably want to add a final touch of BBQ sauce over the top of the shredded Monterey Jack cheese before the Slider bun lids go on top.
Step 17: Melt some butter and baste the top of the Slider Buns. This will give them a nice golden appearance but it will also act as an adhesive for the final ingredient.
Step 18: On top of the melted butter, some Everything Bagel Seasoning was applied, which contains Poppy Seeds, Toasted Sesame Seeds, Dried Garlic, Dried Onion, and Salt.
Step 19: With some foil placed on top, the finished BBQ Chicken Sliders went back into the pellet smoker still running at 325 degrees for 15 minutes to melt the cheese and warm up the sliders.
