While some recipes will wrap a pork loin to cook it on a pellet grill, its not strictly necessary.
You can cook a pork loin without wrapping it on a pellet grill, even at roasting temperatures (350 degrees) without it becoming dry/fluffy.
However, ideally, you will have an upper rack in the pellet grill to avoid the direct heat of the pellet burn pot. You'll also want to monitor the internal temperature of the pork loin with a meat probe to take it off the pellet grill as soon as its internal temperature hits 135 degrees.
