There are obviously many different methods and recipes to prepare chicken wings. Where possible I would encourage you to try and smoke your chicken wings, as chicken takes on smoke flavor so well. However, this recipe is something a little different, the chicken wings are first placed in a pickle brine before being cooked at a high heat.

Step 1: Obviously, the starting point here is the chicken wings. Get them in a bowl and ready to go. Always keep in mind food safety when handling raw chicken.
Step 2: The next step is to place the chicken wings in a plastic bag and pour in some Dill pickle brine. You’ll then want to push the air out of the bag, seal it, and place it in the refrigerator for around two to four hours.
Step 3: You’ll then need to prepare the basting sauce for the chicken wings. For this recipe its 2 tbsp of Bourbon, 4 tbsp of Brown Sugar, half a tbsp Onion Powder, half a tbsp Garlic Powder, half a tbsp Paprika, and a little bit of Kosher salt and Black Pepper.
Step 4: Then mix all those ingredients together, and then add in some honey to suit which will help this basting sauce stick to the surface of the chicken wings.
Step 5: After being sat in the pickle brine in the refrigerator for three hours the chicken wings were taken out and dried off in some paper towel, which is an important step.
Step 6: Ideally, you’ll have a baking tray and suspended rack which you can use to place the chicken wings on to baste them. This way you can get the basting sauce all over the wings without having them swimming in the sauce as they cook.
Step 7: Don’t forget to turn over each of the chicken wings to baste them with the sauce on both sides.
Step 8: It’s then time to get the chicken wings in the pellet smoker/oven. You’ll want to preheat to a temperature of around 425 degrees. Then leave the chicken wings to cook for around 15 minutes.
Step 9: After the chicken wings have been cooking for around 15 minutes then start to apply the basting sauce. That tray is going to catch sauce runoff and make cleanup a whole lot easier.
Step 10: After basting the chicken wings, its then time to get the chicken wings off the tray/rack and get them down on the grates of the pellet grill itself. In otherwords, going from an indirect heat to a direct heat to crisp up the chicken wings.
Step 11: With the chicken wings down on the grates, you’ll need to keep an eye on them. While you do want the grill marks and a nice crispy finish, they could also easily burn.
Step 12: As soon as you see an internal temperature in the chicken wings over 165 degrees, they are safe to eat.
Step 13: And that’s it! Some easy-to-prepare chicken wings with some nice pickle flavor and a nice crispy outer finish. You could obviously serve them with some sliced or diced pickles. Fantastic.
