Delicious BBQ Chicken Sandwich Sliders With Melted Cheese & Red Onion

When it comes to producing lots of tasty food for friends and family coming around but in as little time as possible, sliders are a great solution. With this recipe, around two pounds of chicken cutlets were used to produce twelve sliders, and they were finished with some red onion slices and melted Monterey Jack cheese.

Step 1: For this recipe to produce twelve slider sandwiches two pounds of chicken cutlets (chicken breasts) were used and placed in a bowl ready for the seasoning.
Step 2: These chicken cutlets were hit with two rubs. The first was the Recteq Four Letter Rub, which contains Salt, Pepper, Garlic, Onion, Pepper, and Vinegar. Also, the Recteq Screaming Pig Rub was applied, which contains Paprika, Habenaro, and Cayenne.
Step 3: Using your hands (and gloves ideally for food safety) after applying a liberal application of the rub, make sure that all the chicken cutlets have a good coating.
Step 4: The seasoned chicken cutlets then went onto the pellet smoker running at 375 degrees.
Step 5: Next your attention goes back to the slider buns. You’ll want a nice long and sharp knife to cut the buns into two pieces, doing your best to get the top and bottom of the buns as even as possible.
Step 6: Place the bottom layer of the buns in a baking tray; disposable trays will make cleaning up a heck of a lot easier, especially if you’re going to prepare lots of sliders.
Step 7: Next slice up some nice red onions into thin slices.
Step 8: Just place the sliced-up red onion in a bowl/to the side of your work surface before going back to check on the chicken cutlets on your grill/smoker.
Step 9: You want test the chicken cutlets to an internal temp of over 165 degrees for food safety, at 375 degrees they should take around 25 minutes. Don’t just test one though, check as many as you can, ideally all of them.
Step 10: Now, you need a clean bowl to collect the chicken cutlets off the grill/smoker. You need to avoid cross-contamination from any bowl used previously with the raw chicken.
Step 11: The next step is to pull the chicken cutlets apart in a bowl. You don’t need to go down to really small pieces, just bite-sized chunks that will spread evenly over the sandwiched sliders.
Step 12: After the chicken had been pulled ready for the sliders, it was given a final hit of BBQ rub, as obviously the previous application of rubs only touched the outer surface of the chicken.
Step 13: The two pounds of cooked pulled chicken was then spread evenly over the base of the twelve slider sandwich buns.
Step 14: You’ll want to have some BBQ sauce to hand (obviously). For this recipe, the Recteq Harry’s Secret Sweet Sauce was used which includes Worcestershire Sauce along with Honey and various spices.
Step 15: You’ll then give the pulled chicken a nice liberal application of your chosen BBQ sauce.
Step 16: To make these BBQ Chicken Sliders as appealing as possible, with your grill/smoker still warm, place some butter in a pan ready to glaze the top of the slider buns.
Step 17: Next, get the sliced red onion you prepared earlier and spread them evenly over the top of the pulled chicken covered in BBQ sauce.
Step 18: Then a good amount of freshly shredded Monterey Jack cheese was placed over the top of the shredded red onion.
Step 19: Get the top of the slider buns on of these BBQ chicken sandwiches, but you’re not done yet; they need to go back on the grill/smoker to melt down that cheese.
Step 20: Before placing the completed BBQ chicken sliders in your grill/smoker for around 15 minutes at around 350 degrees, glaze the top of the buns with the melted butter.
Step 21: Get the completed BBQ chicken sliders back in your grill/smoker for around 15 minutes for the buns to turn golden from the butter glaze and for the cheese to nicely melt.
Step 22: After those 15 minutes on the grill/smoker that butter glaze has given these BBQ chicken sliders a fantastic presentation.
Step 23: And that’s it! Golden BBQ Chicken Sliders with red onions and melted Monterey Jack cheese. They’re a fantastic option if you’ve got to entertain a large group of friends and family.
