Step 1: This ultimate breakfast burger recipe starts with a pound of freshly ground chuck beef from the butcher. Hence, it will have the ideal 80/20 ratio of protein to fat to make the best burger patties.
Step 2: Added to the ground chuck beef was a quarter of a large sweet onion finely diced. The onion will add flavor but also moisture to the burger patties as they cook. Then one small finely diced Jalapeno was added for a little kick.
Step 3: Then a couple of tablespoons of Worcestershire sauce was added, this will up the savory flavors of the burgers.
Step 4: Then salt and pepper were added, two tablespoons of each, and that will provide the final seasoning for the burger patties.
Step 5: Its then simply a case of getting your hands into the ground beef and mixing it through with all those ingredients.
Step 6: Separate the pound of ground beef into four equal piles and then squeeze each pile into a ball.
Step 7: Then place each beef ball down against a flat surface. Use a burger press if you have one, but really, you can just do it with your hand.
Step 8: After flatting the burger patties, pick each one up and then work in the edges to give the patties a consistent thickness/shape.
Step 9: You’ll then want to use two fingers and press lightly down in the center of each burger pattie to make an indentation. This will stop the burgers from expanding into a ball as they cook.
Step 10: With the burger patties fully prepared, you’ll want to place them in the fridge/cooler until they are ready to go on the grill, so they maintain their integrity.
Step 11: Preheat your grill to around 500 degrees and then get a cast iron skillet on there. The first thing to cook will be the bacon.
Step 12: When cooking bacon in a cast-iron skillet such as this you don’t need any oil, as the bacon has so much fat. This bacon fat will then be used to cook the eggs later on.
Step 13: Cook the bacon to the point you’re happy with, either on the lighter side or burnt to a crisp, you do you. Then place the bacon on some paper towel to get rid of the surface grease, but leave the fat in the skillet to cook the eggs.
Step 14: For the burgers, you may want to turn the heat down a little to around 450 degrees.
Step 15: As soon as the underside of the burgers has started to get a light char/caramelization flip them over.
Step 16: As these burgers were made with freshly ground chuck beef, they don’t need to be cooked through as thoroughly as pre-prepared burgers.
Step 17: As the burgers have cooked a few minutes on the other side, its time to load them up with the bacon you cooked earlier.
Step 18: Then place two slices of good quality cheddar cheese over the top of the bacon as the burger patties continue to cook.
Step 19: By the time the cheese has nicely melted over the bacon and over the burger patties they will be ready to be taken on the grill and put to one side to rest for a few minutes while the eggs are cooked.
Step 20: Once the burgers are off, turn the grill back up to 500 degrees. For this recipe, some Everything bagels were used which have a topping of Sesame Seeds, Poppy Seeds, Dried Onion, and Garlic. While you’re cooking the eggs get the sliced bagels down and toasting.
Step 21: While the bagels toast, get the eggs cooked in the skillet with the bacon fat. These eggs were cooked just over easy as you want the runny jolk (trust me).
Step 22: To build the burgers, some spicy mayo was used (mayo and Sriracha sauce) and some large tomato slices.
Step 23: To start building up the burger, give both the top and bottom of the bagel a nice thick covering of the spicy mayo.
Step 24: Then place a tomato slice on the bottom, followed by the burger pattie with its bacon and cheese topping.
Step 25: Place the cooked over easy egg on the top along with the bagel lid, and you’re done. Quite simply one of the best ways to start the day.
Step 26: I won’t lie; this is going be a messy burger to eat, but the flavor of that over-easy egg with both the bacon and burger patty, will be well worth it.
Step 27: As you can see the ground chuck beef burger patty is cooked to perfection and juicy. While very simple to prepare, the flavors of this Ultimate Breakfast Burger are immense.
