When it comes to good sandwiches, I think few hit the spot better than a good Philly Cheesesteak sandwich. For this recipe, first, some New Your strip steaks are seasoned and then smoked. Then, along with some sliced vegetables, the steak strips are sliced and then finished on the griddle, with some cheese mixed in. Simple, but a fantastic bite to eat.

Step 1: A couple of New York strip steaks were seasoned with the Traeger Anything rub, which is a mixture of Salt, Pepper, Galic, and some other secret spices.
Step 2: Next, a meat probe was inserted to monitor the steaks up to an internal temperature of 125 degrees. They were then smoked on the Traeger for around 30 minutes with the Louisville Slugger pellets, which are a Maple Hardwood blend.
Step 3: While the steaks were smoking the veggies were prepped, starting with some nice long red peppers.
Step 4: Then a large onion was chopped up along side some green peppers to bring a little different flavor and color to these Philly Cheesesteak sandwiches.
Step 5: Once the steaks hit an internal temp of 120 they were taken off the pellet smoker and sliced. The steak is not fully cooked yet; this will take place on the griddle alongside the sliced peppers/onion.
Step 6: With a little oil down on the griddle (Traeger Flatrock), the sliced peppers/onion goes down first. You’ll want to keep them moving with your spatulas so they don’t burn, but you’ll want a little char on them.
Step 7: The pre-smoked steak, now sliced, is next to go on the griddle. At the same time, you’ll want to get the buns down on there to toast up a little.
Step 8: As the sliced veggies and steak were getting close to being cooked, some Cheeze Whiz went over the steak as it finished cooking.
Step 9: That Cheese Wiz was quickly mixed through the steak as it cooked with the spatulas.
Step 10: With the sliced veggies and steak nicely cooked through with a little char, the veggies were then mixed through the cheesy steak slices, ready to be loaded onto the sandwiches.
Step 11: On the toasted burns, a couple of slices of cheese were added first.
Step 12: Then the cooked sliced veggies/steak were added on top. A Philly Cheesesteak is obviously not a complicated recipe, but even simple things done well can taste fantastic.
