Step 1: As with any good burger (or taco in this case), you want to start with a good quality 80/20 blend of protein to fat to get the best flavor and texture. Two pounds of ground beef was used for eight smash tacos.
Step 2: You’ll then take each ball of ground beef and push it into the surface of the tortilla. Don’t worry, the tortilla will be fully cooked and safe to eat by the time its a taco.
Step 3: With your hand work the minced beef around until its an even thin layer over the whole surface of the tortilla.
Step 4: It’s then time for the seasoning, in this case, the Recteq Freakin’ Greek Rub was used, which is a mixture of Salt, Pepper, Garlic, Oregano, Coriander, Cardamom, Marjoram, Thyme, and Nutmeg.
Step 5: Give the meat a nice light dusting of seasoning. Remember, this is a very thin layer of meat, so you don’t want to go heavy on the seasoning.
Step 6: You’ll want your griddle at a medium to high heat, and you’ll want to give it a light coating of high temperature oil to start.
Step 7: Place the tortillas meat side down on the griddle and they should be left to cook for around three minutes.
Step 8: Get your griddle spatulas and give each one a good press down against the surface of the griddle to produce a nicely seared finish. These are smash tacos after all.
Step 9: After three minutes, its time to turn them over and this is what that beef mince should look like with some fantastic caramelization.
Step 10: To give the tortillas a nice crispy finish to produce a taco, they were moved the outer edge of the griddle away from the grease.
Step 11: As they continued to cook for a further three minutes a slice of cheese was added to each one.
Step 12: Next, for some additional flavor and texture, some onion was chopped up.
Step 13: The chopped onion was then placed on the griddle to cook right on top of the grease from the beef to absorb all that flavor.
Step 14: After those three minutes bread side down on the griddle, this is what they looked like, pretty good right?
Step 15: Next, some of the cooked chopped onion from the griddle was placed on top of each taco.
Step 16: The tacos were then dressed with some chopped lettuce for additional texture and some Secret Sauce, which, as we should all know by now, is a mayo, ketchup mixture with additional ingredients to suit individual preferences.
Step 17: And this is the finished result, a smash taco, which I think we can all agree looks absolutely delicious.
