If you’re meeting up with friends and family to watch a game or you’re just looking to cook up some simple but tasty appetizers, these Raptor Claws are well worth considering. ‘What the heck is a Raptor Claw?’ I hear you ask. Well, they resemble the appearance the the dinosaur they’re named after. What they actually are is some Jalapeno peppers with a cream cheese filling and sausage meat outer end.

Step 1: You’re going to need four large Jalapeno peppers. With one pound of sausage meat, that will be sufficient to prepare four Raptor Claws.
Step 2: Next, chop off the top of the peppers, and you’ll need to clean out the center of the Jalapeno peppers to make room for the cream cheese. You don’t have to remove all the seeds, but keep in mind the more seeds you leave in there, the hotter they will be.
Step 3: An 8oz block of cream cheese will create more than enough filling for the peppers. Then add in around half a cup of shredded cheese.
Step 4: Next, add in some granulated garlic, enough to suit your own taste preference, but a teaspoon of garlic was used in this recipe.
Step 5: For this recipe, the Pit Boss Sweet Heat rub was also used, around two teaspoons.
Step 6: Now mix all those ingredients together. If the cream cheese has been warmed up a little this will make it a lot easier, and it will make it easier for the next step as well.
Step 7: Spoon the mixture into the peppers, tapping the base of the pepper against the table to get the cream cheese to drop down. Leave a little space at the top though, as the cheese will expand as it cooks.
Step 8: Then work each ball of sausage meat over the open end of the Jalapeno peppers to seal in the cream cheese.
Step 9: Before they go in the oven/pellet grill you’ll want to give them a final covering in your BBQ rub of choice, rolling the Raptor Claws in your hand as you do so to get good coverage.
Step 10: Put them into an oven/pellet grill at 350 degrees for around 45 minutes. For the last 10 to 15 minutes of cooking up an internal temperature on the sausage meat of 165 degrees, hit them with some BBQ sauce.
Step 11: The end result is these fantastic Jalapeno/Cream Cheese/Sausage meat Raptor Claws. You can serve them as is or cut them in half. However, remind you’re guests about the hot cream cheese though so they don’t burn their mouth.
